i am not against chivalry, but man robin's life it at stake as well as the world's. sanji can't hit a unofficial intelligence agent who probably killed a lot of people in the past even if the whole world have to pay for it. even if he kills her here, it will probably protect the whole world including the 50% women population.

Honestly, it's a fine line. Chivalry is dead in today's world because people believe in equal rights and seeing people as people, not as gender. Also, many people can't be bothered to treat others nicely, especially women (cue US abortion ban). However, Sanji specifically is a true knight with twirly brows because of his past (you'll find out after another 500-600 eps when Sanji's true backstory is explored). BIG SPOILER The biggest reason is b/c he watched his mom suffer quite a bit (and his sister too), was really loved by them, and grew with the love and chivalry for women embedded into his soul as a result.

So, it's not that Sanji doesn't want to give up his chivalry for Robin, but he feels that he can't. Because if he does give up his chivalry, he feels he won't be the same Sanji that Robin or his mother knew and he couldn't live with himself or face his mother after that, regardless of the reason.

Edit: Don't forget that Sanji's character has always been a gentleman cook and he often lectures others in manners and treatment of ladies. It goes against his very being!

If someone doesn't treat me equally in a fight just cause I am a woman, it will be a disgrace to me. But in sanji's case I know why he respects them so much. Just like luffy and zoro, sanji has his principles and will follow it even if it will cost him his life. And I respect him for that.
